Stir-Fried Squid and Shrimp with Green Peppercorns
Ingredients:
200g fresh squid (cleaned and sliced)
200g fresh shrimp (peeled and deveined)
2 tablespoons cooking oil
3 cloves garlic (minced)
1 small onion (sliced) – optional
1 red chili (thinly sliced) – optional for spice
2–4 sprigs of fresh green peppercorns – optional, depending on preference
1 tablespoon oyster sauce
½ tablespoon fish sauce
3 tablespoons tamarind juice (or ½ teaspoon vinegar as a substitute)
½ teaspoon chicken powder (seasoning powder)
A few kaffir lime leaves or scallion slices (optional for aroma)
Instructions:
Heat the cooking oil in a wok or large frying pan over medium heat.
Add the minced garlic and sauté until fragrant and golden.
(Optional) Add the sliced onion and stir for about 1 minute.
Add the squid and shrimp. Stir-fry for 2–3 minutes, or until they begin to turn opaque.
Add the sliced red chili and green peppercorn sprigs.
Season the dish with oyster sauce, fish sauce, tamarind juice (or vinegar), chicken powder, and a pinch of sugar.
Stir well to combine all ingredients and cook for another 1–2 minutes, just until the seafood is fully cooked but still tender.
(Optional) Add kaffir lime leaves or fresh scallions for extra aroma before removing from heat.
Serve hot with steamed rice.
Tip: Avoid overcooking the squid and shrimp to keep them tender and juicy.
